Food Fit for a Musketeer

What kind of burger would suit the refined palette of a musketeer such as D’Artagnan?The burger would need to be bursting with flavor, for starters. And all the ingredients must be fresh, for D’Artagnan would never compromise on freshness.
In 2019, Xavier Athletics reached out to Xavier Dinning Services asked their chefs to create the ultimate gameday burger – one fit to bear the name of D’Artagnan himself. Two delicious burgers were born as a result: D’Artagnan’s Revenge and The X Burger.
“I think they turned out well,” said Tom Turnbull, executive campus chef at Xavier and the creator of both burgers. “Everyone seems to like them.”
D’Artagnan’s Revenge is a gourmet gameday offering sold exclusively at the Joseph’s Club, the Courtside Club and through suite-level catering at the Cintas Center. And this burger is not for the faint of heart. Turnbull went through multiple iterations of the burger to make sure D’Artagnan’s Revenge is legitimately hot and spicy enough to match the fiery passion of its namesake.
The burger consists of a quarter pound of all-Angus beef sandwiched between two brioche buns along with lettuce, tomatoes, habanero pimento cheese, a jalapeño popper and the ultimate ingredient: bacon jam.
“We took some bacon and rendered it down with brown sugar, honey and ketchup cooked to a jam consistency,” Turnbull said.
D’Artagnan’s Revenge is finished with an ‘X’ sear-grilled on the top of the bun, making this burger a unique Xavier gameday tradition.
In celebration of March Madness, Turnbull adapted D’Artagnan’s Revenge into a second burger which he calls ‘The X Burger.’ The X Burger is exclusive to Burger 513 – a made-to-order restaurant located within Gallagher Student Center.
The X Burger is more savory, forgoing spice for a unique flavor onto itself. It contains a quarter pound of all-Angus beef, lettuce, tomato, American cheese, beer-battered onion rings and a drizzling of tangy barbeque sauce. Like D’Artagnan’s Revenge, the X Burger shares the seared ‘X’ on the top bun.
Whether you visit Cintas Center on gameday or stop by the student center for lunch, every Musketeer should try one of Xavier’s signature burgers.
D’Artagnan would have it no other way.
